When I think about birthday cake, I immediately think of chocolate cake so this recipe is super chocolaty and has a festive look. Plus, who doesn't love birthday cake? (Even if it's not your birthday, cake is always a good idea!)
If you received my first newsletter, then you know I promised you I would share this special birthday cake recipe. My birthday was already last week, as was my husband's, we were born just a day apart (in different years though) so it was a weekend filled with celebrations and happiness.
Because our birthdays fall so close to Passover we needed a flourless cake, which also makes it good for people who avoid gluten, and to top it all off, it's also vegan and parve so you can have during the holiday after eating meat (if you stick to the separation).
I loaded the cake with decorations just for the festivity; you can also have the cake with just frosting and no added decorations.
