Summer is starting soon so it’s time for some no-bake desserts. These yummy carrot cake energy balls have all the delicious carrot cake flavor without having to bake a carrot cake. This is an easy little treat that’s super healthy, for one, it’s gluten-free, raw, vegan, and also has no sugar in it!
The base of these delicious energy balls are dates. The dates add a touch of sweetness alongside the raw, finely grated carrot that is also mildly sweet.
The Medjool dates in these energy balls offer a high amount of fiber and a variety of minerals like iron, potassium, B vitamins, and more.
Besides dates and carrot, I used pecans, walnuts, almond meal, and cinnamon - that's it. All you need to do is grate the carrot very fine and in a blender, blend all ingredients together. That’s it!
To coat my carrot cake energy balls, I used desiccated coconut. You can use sesame seeds, flax seeds, or anything else that’s similar that you like!
These energy balls are healthy and packed with flavor, they can be an easy dessert or a snack after or before a workout - they will give you the energy to train more for sure.
The texture of the energy balls is rather soft and the nuts add a bit of crunchiness (as long as you don't over-process the batter in the blender).
