I know I said I’m not a big fan of fried food but it’s almost Hanukkah! It’s the literal tradition to eat fried food during this great holiday. But, I did have to add my own spin on this recipe and you can rest assured that these Latkes are gluten free. Lately, gluten free diets are very popular and I wanted to share a tasty option for this holiday that also appeals to those on a gluten free diet.
In my baked latkes recipe, I mention that every root vegetable is fit to use for latkes. This rule applies here too. The classic latkes are usually made from potatoes. However, I wanted something a bit different so I chose to use carrots and sweet potato this time - yum!
The vegetables are only grated into small strips, there is no need to pre-cook them and make mash. Heaven!
To stick the vegetables to a patty or a fritter, I used eggs. The recipe only includes very few ingredients – sweet potato, carrots, eggs and you can add any spices you like to upgrade the flavor. I used sweet paprika, salt and pepper.
The recipe is very easy to make as is usual on my blog. You simply mix the ingredients in one bowl and fry the latkes. It can't get any easier than that!
Lastly, if you do want to bake these latkes and not fry for some reason, you can definitely do it. Simply bake at 180°C / 350°F for 30-35 minutes.
Recipe yields approximately 15 latkes, depending on the size you make them.
