Green Pear Salad

Green Pear Salad

After all the scrumptious cake and dessert recipes I post here, I wanted to write about something a little more light and healthy – but still insanely tasty. Salad for dinner is always a nice alternative, especially in the heat of summer when all you want is a light and easy meal. Usually, most of us make salad only with vegetables; however adding just one fruit can really lift and improve the overall taste. When you pick a pear, try to use one where the "neck" is softer - that means that the pear is ready to eat. If a pear is too solid then not only is it not ready for consumption, but it also won’t taste nice.

Ingredients:

  • 1 pear thinly sliced
  • 4 cups of baby leaves washed and dried
  • 1 cucumber sliced
  • 1/2 cup Feta cheese crumbles

For the dressing:

  • 2 tablespoons olive oil
  • Salt and pepper (as much as you like)
  • Juice of one lemon

Preparation:

  • 1. Combine baby leaves and pear in a salad bowl. Add cucumber, and feta cheese.
  • 2. Season with olive oil, lemon juice, salt and pepper.
  • 3. Dig in and enjoy!
