The recipe for this week is delicious Passover chocolate chip cookies but in reality, these cookies are perfect all year round. If you avoid eating gluten or are looking for an easy cookie recipe, then this is your go-to recipe for sure!
With only 4 ingredients, you can easily whip these cookies and after a very short time, you can munch away!
Unlike store-bought Passover cookies, these ones are soft and chewy. Now that’s music to my ears!
This year it has been very hard to find eggs in the supermarkets so if you’re worried that you need five or more, don’t worry, you only need one egg for this recipe!
If you have some vanilla extract then you can add a teaspoon to elevate the flavor of the cookies.
The main ingredient in these cookies is almond flour or almond meal. Basically it is almonds ground very fine and in many Passover recipes, you can find this ingredient. Because this recipe doesn’t call for special Passover ingredients like matzo meal for example it is very easy to bake all year for anyone on a gluten free diet.
Like almost all cookie recipes on my blog, you only need 1 bowl and a tablespoon to make these easy cookies. If you prefer changing the chocolate chips to something different then you can use raisins, other nuts or just stick to chocolate chips - everyone loves chocolate!
On top of it all, this recipe is non-dairy so it’s parve and you can have these chocolate chip cookies as your holiday dessert or for a Shabbat meal.
Like always, if you have a big family and need more cookies then simply double the ingredients. This year a lot of people are alone for the holiday and therefore don’t need a lot of cookies but still want to have a small little sweet treat.
