Thank you, mom, for teaching me this easy recipe! She never made it with matcha though although this is my version of adding flavors and using my favorite tastes. The cake is very simple to make and you only need a bowl and tablespoon to make it.

If you follow my blog regularly, you will have noticed that I tend to try to add matcha to almost every recipe (LOL! :) ), well I really like it and it has many health benefits. If you do not like matcha, I always provide another option that you can easily substitute, don't worry

Originally, my mom used to add nuts or chocolate chips but I decided to change the cake and improve it to my preferred tastes. If you want, you can always reverse back to the original recipe and use only one cup of nuts or chocolate chips instead of the shredded coconut and matcha powder. To make this cake vegan, you can also change the 3 eggs to 3/4 cup applesauce and the heavy cream to 1 cup of coconut cream.

Because the matcha color might become dull when baking, you can add 2 drops of green food coloring to help the cake look greener.

  • 2 cups of flour
  • 1 cup sugar
  • 1 cup heavy cream
  • 3 eggs
  • 1 tablespoon of baking powder
  • 1 teaspoon of vanilla extract
  • Zest of one lemon
  • 1 cup of shredded coconut
  • 2 tablespoons of matcha


  1. Heat the oven to 200°C / 400°F fan.
  2. In a bowl, mix all the ingredients to a unify batter.
  3. Grease 2 English cake molds / 12x4 inch tins.
  4. Pour the batter into the molds.
  5. Bake for 35-40 minutes.
  6. Cool at room temperature.
  7. Have a piece of cake with a cup of tea and as always, enjoy!
