With Hanukkah over, I found myself with some extra sour cream. Instead of throwing it away, I wanted to use it! So this is how I got to baking these delicious parmesan cheese bites, which are more or less like savory cookies. With a few simple ingredients and half an hour, you can be munching on these parmesan cheese bites. It's perfect for noshing with a drink or just as is. Either way, you won’t be able to stop scarfing these down so it’s quite a dangerous snack!
I call these savory cookies "parmesan cheese bites" since the main flavor that you taste is the parmesan cheese. Now, you can use another hard cheese that’s similar like Grana Padano.
To make these parmesan cheese bites, you will need all-purpose flour, sour cream, baking powder, grated parmesan cheese, butter, salt, water, and an egg. For garnish, you will need some seeds. I used sesame seeds, nigella seeds, and flax seeds.
The recipe is simple to make, as always, and also rather quick to make. A definite win-win in my book! You just mix all ingredients in one bowl to create a dough. Roll the dough and cut it into little squares. The size of the squares is up to you, I made them very small - 1x1 inch. Brush the squares with egg wash and sprinkle seeds on top. I kept the parmesan cheese bites close to each other and didn’t split them like you would with cookies. Then you bake for 20-25 minutes and once it’s cooled down, you can start munching! The final outcome is very rustic actually and just looks homemade. You can have it at any time of the day.
This little nibble is also a good option for guests to enjoy but this year, we don’t have any thanks to COVID.
