The holidays are almost here and it doesn’t really matter what holiday you celebrate - Hanukkah or Christmas or even both of them, you will probably meet with friends and family which means you need some treats to offer if you are hosting or to give as a gift. These easy to make energy balls are your solution, you don’t need to turn on the oven and they are really quick and easy to make. An added bonus is that they are gluten free and vegan so they can fit even more guests and friends on certain diets. That’s a win-win!

These pumpkin energy balls can also serve as a delicious on-the-go breakfast or a pre/post workout snack when you need a sweet bite of energy!

No-Bake Pumpkin Energy Bites Recipe

Energy balls or bliss balls is a general name for a little, sweet and healthy snack that includes seeds, nuts and usually doesn’t require baking. I like to include dates in my energy balls because they help stick everything together and add flavor.

These pumpkin energy balls are super delicious and you can control their sweetness by adding less or more maple syrup. In addition to the maple syrup, my pumpkin bliss balls contain pumpkin puree, pumpkin spice, pecans, walnuts, almond meal and as I mentioned, dates. For the topping of the balls, I added sesame seeds and flax seeds. You can change the topping to a different seed or shredded coconut, cocoa powder, matcha, and more. It’s really up to you and your taste buds!

Here is the recipe for these delicious no bake pumpkin energy balls:

Ingredients:

  • 1/3 cup pumpkin puree
  • 1/2 cup almond meal
  • 1/4 cup pecans
  • 1/4 cup walnuts
  • 3 tablespoons maple syrup
  • 1 teaspoon pumpkin spice
  • 8 pitted dates

For Topping:

  • 2 tablespoons sesame seeds
  • 2 tablespoons flax seeds

Preparation:

  1. In a blender, crush all ingredients together to form a unified batter.
  2. With your hands, create small balls and roll them on a plate with the sesame and flax seeds to coat fully.
  3. Place the balls on a plate.
  4. Place the plate in the fridge to set for 15 minutes.
  5. Enjoy this sweet treat and happy holidays!
