Your mornings might not be super busy as you probably aren’t rushing out the door to head to the office. Currently, I’m working from home and am enjoying it - just like many people all over the world. However, now and again, I do have crazy mornings to juggle. And when this happens, I need a quick and easy breakfast because I’m limited on time.

That’s where this delicious Vanilla Overnight Oat comes in! In the morning, you just grab it out of the fridge and you’re set. To mix it, you need a few minutes set aside the night before and a full overnight in the fridge so you can get the perfect texture the next morning.

With only 5 ingredients you most likely already have in your kitchen, you can whip this easy dish quickly and have a healthy morning. One small healthy dish in the morning can change your whole day!

Vanilla Overnight Oats Recipe

This breakfast dish is far better than eating cereal as you control the amount of sweetness and the oats are healthier. The main flavor of this simple overnight oat is vanilla and I used vanilla paste to get it. You can use vanilla extract too. The sweetness comes from maple syrup, I added 2 tablespoons, however, you can add more or less by your taste.

To garnish the dish and add even more flavor, I added berries but you can use any fruit such as apples, bananas, etc.

The idea behind this quick dish is that instead of cooking the oats, you only soak them in the milk, vanilla, and maple syrup. In the morning, it will have the perfect texture and will be ready to eat. I used soy milk, but any milk that you like will work just fine.

This recipe is very basic and you can upgrade it easily. For a different flavor, you can switch the vanilla to 1 teaspoon of cinnamon for example. You can add crushed nuts, chopped dates, or add some chia seed jam on top.

The portions in the recipe are for 2 servings if you are only making it for yourself and are not much of an eater in the morning then you can make half of the recipe. On the other hand, if you make it for everyone in the family then you can double or triple the recipe.

Ingredients:

  • 1 cup old fashioned oats
  • 1 cup soy milk (or whatever milk you prefer)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla paste (or extract)
  • Berries for garnish

Preparation:

  1. In a bowl, mix the oats with the milk, maple syrup, and vanilla.
  2. Transfer to small jars and cover.
  3. Refrigerate overnight.
  4. Add the berries on top.
  5. Serve and enjoy!
