For the high holidays, there is always chopped liver for the first course. But what about the vegetarians in your family? I created an easy mock chopped liver that is also healthy! Win-win.
Passover is known to be the holiday that celebrates dishes with eggs and potatoes. If you avoid kitniyot, you need to come up with different ways to have your eggs and potatoes to keep it interesting for everyone.
This vegetarian chopped liver is great on matzo and is very satisfying.
To make this, you will need only 4 ingredients - boiled eggs, sautéed onion, walnuts, and spices for taste, like salt and pepper. That's it, you simply grind all of it together in a blender and serve. Couldn’t be simpler.
Many versions of mock chop liver call for lentils, mushrooms, or other types of nuts. This version uses eggs that are fit Passover and it contain no kitniyot. It’s parve and fits any meal of the day. This veg chopped liver is also gluten-free which makes it perfect for Passover.
The outcome is a thick paste and can resemble hummus. If you don’t eat kitniyot during Pesach then this is a great substitute for you and again, it’s so healthy!
For serving the vegetarian chopped liver, I placed it in a bowl. You can also garnish with some herbs on top to make it more festive.
