Gluten Free Latkes
Gluten-free and also grain-free Hanukkah latkes made with carrots and sweet potato. Delicious addition to your latkes bouffe.

- 1 medium sweet potato (2 cups grated)
- 2 carrots (2 cups grated)
- 2 eggs
- ½ teaspoon sweet paprika
- Salt and pepper by your taste
- Vegetable oil for frying
Grate the sweet potato and carrots.
Place the grated vegetables in a bowl and add the eggs and spices.
Mix the batter well.
With your hands, create the latkes and place on a plate.
Heat a pan with any vegetable oil you prefer.
Fry each latke for 1-2 minutes on each side.
Serve the latkes hot or cold with your favorite dip.
