This salad is so simple to make and it goes with any type of meal. Fresh cut vegetables with a simple dressing makes it the perfect side dish.

Ingredients

cucumbers

green bell pepper

yellow bell pepper
Few mint leaves or other herbs you prefer
(optional)

olive oil
Juice of one lemon
salt and pepper by your taste
Instructions
Cut the cucumbers, tomatoes, and peppers into small cubes.
Chop the mint leaves.
Place all cut vegetables and the mint in a bowl.
Add the olive oil, lemon juice, salt, and pepper.
Mix well until all salad is coated with the dressing.
Serve and enjoy!
