Lemon Bars
Refreshing dessert with citrus taste that is heaven for your taste buds. These lemon bars are a very good choice for outside picnics, as they are moist, already cut and easy to carry in a box.

For the base:
- ½ cup soft butter OR ½ cup coconut oil
- ⅓ cup sugar
- Pinch of salt
- 1 cup flour
For the filling:
- 4 eggs
- 1 cup sugar
- ¼ cup lemon juice
- Zest of one lemon
- ⅓ cup flour
- ½ teaspoon baking powder
In a mixing bowl, whip the butter, sugar and salt to a light and fluffy batter. Sift in the flour and mix with a spatula until dough lumps are created.
Flatten the dough on a greased pan (9x13)
Cool in the fridge for half an hour.
Set the oven to 170°C / 350°F fan.
Bake just the base for 20 minutes.
Make the filling: whip eggs and sugar to a fluffy mixture, add lemon juice and lemon zest. Sift the flour and baking powder in and fold with a spatula.
Pour the filling over the baked base and bake for 25 minutes.
Cool at room temperature.
Cut into squares and sprinkle powdered sugar on top for the garnish.
