Ingredients

  • 20 pitted Medjool dates
  • Handful shelled pistachios
  • Handful slivered almonds
  • Handful pecan nuts

For coating:

  • 4 tablespoon unsweetend desiccated coconut

Instructions

  • Place in a blender all the nuts and blend long enough to crush the nuts into smaller pieces but not completely, you still want to have some texture.
  • Add the pitted dates and blend them all together to a unified batter.
  • Transfer the date batter to a baking paper and place it in a row that you will shape soon into a log.
  • Spread the desiccated coconut on the baking paper near the date batter and then use the paper to roll the batter on the coconut (like rolling sushi).
  • Shape it with your hands to a nice roll.
  • Make sure the whole roll is coated well.
  • Wrap the roll with the baking paper and place in the freezer for 30 minutes to set.
  • Take out the roll and cut to individual discs/cookies.
  • Have a piece and enjoy!
