In a stand mixer bowl place, the water, dry yeast and sugar, mix well and let it sit for 10 minutes until you see small bubbles and the yeast starts working.
Attach the kneading hook and add olive oil, flours and salt and knead for 5 minutes.
Grease the bowl with more olive oil and let the dough rise for an hour or until it doubles in size. Make sure the dough is covered with oil completely.
Divide the dough to 16 small balls and roll each one of them to a tight ball. Place the buns on a baking pan lined with baking paper.
Let the buns rest for 15 minutes.
Set the oven to 200°C / 400°F fan.
When the 15 minutes are over, bake the buns for 20 minutes until lightly golden.
