Ingredients
  

  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoon soy milk (or other non-dairy milk/water/orange juice)
  • 2 eggs
  • 2 apples peeled and cubed
  • ½ cup sugar
  • ½ cup quick oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract/paste

Instructions
 

  • Preheat your oven to 170°C / 350°F with a fan on.
  • While the oven is heating up, peel and cube the apples into small pieces.
  • In a medium mixing bowl, combine the flour, cinnamon, baking powder, and quick oats.
  • In a separate large bowl, whisk together the sugar, eggs, soy milk, and vanilla extract until smooth.
  • Fold the dry ingredients into the wet mixture using a spatula until well blended.
  • Mix in the cubed apples and stir until fully combined.
  • Transfer the cake batter to a greased loaf pan.
  • Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cinnamon apple cake cool before serving.
