Blueberry Apple Crumb Squares
Yummy blueberry and apple crumb squares that are very easy to whip up and the recipe is also vegan - a double win.
- 1 cup all-purpose flour
- ½ cup ground almonds (almond meal)
- ½ cup sugar
- ½ cup quick oats
- ¾ cup coconut oil (solid)
For the filling:
- 1 cup blueberries
- 1 peeled cored and grated apple
- 2 tablespoon sugar
Heat the oven to 170°C / 350°F with the fan.
In a bowl, place all dough ingredients and mix with a fork to a crumby mixture.
Take ¾ of the crumbles and flatten on a small square pan.
In a mixing bowl, mix the filling ingredients.
Pour the filling on the flattened dough in the pan.
Sprinkle the ¼ crumbles that you kept, evenly on the filling.
Bake for 30 minutes.
Cool at room temperature.
Cut to squares.
