Carrot Cake Energy Balls

Gluten-free, raw, vegan, and also has refined sugar free. Easy little treat to whip up that’s super healthy and delicious.

  • 1 cup grated finely carrots (2-3 medium carrots)
  • ¼ cup pecans
  • ¼ cup walnuts
  • ¼ cup almond meal (ground almonds)
  • 1 teaspoon cinnamon
  • 10 pitted Medjool dates

For coating:

  • 3 tablespoon unsweetened desiccated coconut


  • In a blender, blend all ingredients to a unified batter.
  • With your hands, create small balls.
  • Place desiccated coconut on a plate.
  • Roll the balls on the coconut to coat them.
  • Serve and enjoy.
