Carrot Cake Bites
Gluten-free, raw, vegan, and also has refined sugar free. Easy little treat to whip up that’s super healthy and delicious.

- 1 cup grated finely carrots (2-3 medium carrots)
- ¼ cup pecans
- ¼ cup walnuts
- ¼ cup almond meal (ground almonds)
- 1 teaspoon cinnamon
- 10 pitted Medjool dates
For coating:
- 3 tablespoon unsweetened desiccated coconut
In a blender, blend all ingredients to a unified batter.
With your hands, create small balls.
Place desiccated coconut on a plate.
Roll the balls on the coconut to coat them.
Serve and enjoy.
