Passover Vegetable Kugel

A lighter dish for Passover that is made mainly of vegetables. Vegetable kugel that is savory, full of flavors and easy to make.

  • 5 eggs
  • 1 sweet potato
  • 2 carrots
  • 2 zucchinis
  • 1 potato
  • 3 matzos
  • 4 tablespoon olive oil
  • Salt and pepper by your taste


  • Heat the oven to 180°C / 350°F with the fan.
  • In a bowl, grate all vegetables.
  • Wet the matzos under tap water for 30 seconds.
  • With your hands, break the matzos to small pieces and add to the vegetables.
  • Add the eggs, olive oil, salt, and pepper.
  • Mix well to a unified batter.
  • Pour to a baking pan (9x13).
  • Bake for 45 minutes.
  • Cool at room temperature.
