Heat the oven to 180°C / 350°F with the fan.
In a bowl, grate all vegetables.
Wet the matzos under tap water for 30 seconds.
With your hands, break the matzos to small pieces and add to the vegetables.
Add the eggs, olive oil, salt, and pepper.
Mix well to a unified batter.
Pour to a baking pan (9x13).
Bake for 45 minutes.
Cool at room temperature.
