Set the oven to 170°C/ 350°F with the fan.
Peel and cut the apples into small cubes.
Place the apple cubes in a pan and cook on high for few minutes.
Add cinnamon and sugar to the apples and mix well.
Cook a few more minutes until the apples soften.
Set aside to cool.
Prepare a plate with a bit of water and another plate on which you will roll the rolls.
Dip one rice paper for a few seconds in the water and move it to the empty plate.
Add 2 tablespoons of the apple filling in a line.
Close the 2 sides of the paper on the filling and roll.
Continue steps 7-10 for all the rolls.
Place the rolls on a baking pan.
Brush the rolls with vegetable oil.
Bake for 15-20 minutes.
Cool at room temperature.
Sprinkle with powdered sugar, add pomegranate seeds, or drizzle honey if desired, or just garnish as you wish.
