Tu BiShvat Fruitcake
Celebrate the New Year of the trees with this yummy and dairy free fruit cake.

- 3 cups cut dried fruits
- 1 cup flour
- 1 tablespoon baking powder
- 3 eggs
- ½ cup sugar
- ¼ cup olive oil
- 1 teaspoon ground cinnamon
For garnish:
- 2 tablespoon powdered sugar
Heat the oven to 180°C / 350°F with the fan.
In a mixing bowl, mix all ingredients well.
Grease a loaf tin.
Pour the cake batter into the tin.
Bake for 40 minutes.
Sprinkle with powdered sugar.
