Tu BiShvat Fruitcake

Celebrate the New Year of the trees with this yummy and dairy free fruit cake.

Ingredients
  

  • 3 cups cut dried fruits
  • 1 cup flour
  • 1 tablespoon baking powder
  • 3 eggs
  • ½ cup sugar
  • ¼ cup olive oil
  • 1 teaspoon ground cinnamon

For garnish:

  • 2 tablespoon powdered sugar

Instructions
 

  • Heat the oven to 180°C / 350°F with the fan.
  • In a mixing bowl, mix all ingredients well.
  • Grease a loaf tin.
  • Pour the cake batter into the tin.
  • Bake for 40 minutes.
  • Sprinkle with powdered sugar.
  • Have a piece and a Happy Tu Bishvat!
