Easy Zucchini Bread

Simple and delicious recipe featuring the delicious summer vegetable zucchini. Perfect as a dessert when you want something sweet but also healthy.

Ingredients
  

  • cups grated zucchinis (I used 2 medium zucchinis)
  • cup sugar
  • 2 eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract or paste
  • cups all-purpose flour
  • 1 tablespoon baking powder

Instructions
 

  • Heat the oven to 170°C / 350°F with the fan.
  • In a bowl, grate the zucchinis.
  • Add sugar, oil, vanilla, and eggs.
  • Mix well.
  • Add the flour and baking powder and mix to a unified batter.
  • Pour to a greased loaf pan.
  • Bake for 35-40 minutes.
  • Cool at room temperature.
  • Have a slice and enjoy!
