Gluten Free Hamantaschen (With Almond Flour)

Gluten free hamantaschen are a delicious Purim cookie made with almond flour and filled with date spread. They're easy to make and perfect for anyone looking to enjoy a wheat-free snack.

Ingredients
  

  • cups almond flour
  • ¼ cup (60 grams) cold unsalted butter
  • Pinch of salt
  • Egg
  • Date spread (for the filling)

Instructions
 

  • Begin by combining the almond flour, butter, salt, and egg in a blender (or mixer) until dough starts to unify.
  • Roll this cookie dough between two parchment papers until it is approximately ¼ inch thick.
  • Cut out circles at desired sizes using either a biscuit cutter, a cup or knife.
  • On each circle of dough, place ½ teaspoon of date spread and fold into triangle shapes with your fingers to close off the edges securely.
  • Place these cookies on a baking pan lined with parchment paper and freeze for thirty minutes so they can be set properly prior to baking.
  • Finally, preheat the oven to 160°C (or 325°F) and bake for 9-10 minutes per batch for delicious homemade treats!

Notes

  • These gluten free hamantaschen have very little sugar in them, just in the filling. If you want to add more sweetness then sprinkle powdered sugar on the baked hamantaschen.
  • Feel free to experiment with different fillings. You can use jam, nut butter, or chocolate chips. Just make sure the filling is thick enough to stay inside the cookies.
