- ½ cup sugar
- ½ cup olive oil
- 4 teaspoon pistachio butter
- 1 teaspoon vanilla extract / paste
- 2 cups almond flour
- ¼ cup potato starch
- 1 tablespoon baking powder
Garnish
- Powdered sugar
- Shelled pistachios
In a bowl, blend together the eggs and sugar until nicely combined.
Mix in the oil, followed by pistachio butter, vanilla extract, almond flour, potato starch, and baking powder.
Pour into a pre-greased 8-inch pan before popping it into an oven preheated to 160°C / 325°F with the fan on for 35 minutes.
Once ready, take it out of the oven to cool down before garnishing it with powdered sugar & Shelled pistachios
