Gluten Free Pistachio Cake (Passover Recipe)

This moist and delicious pistachio cake is a perfect gluten-free treat for Passover! Made with almond flour and pistachio butter, this parve cake is sure to be a hit!

Ingredients
  

  • 3 eggs
  • ½ cup sugar
  • ½ cup olive oil
  • 4 teaspoon pistachio butter
  • 1 teaspoon vanilla extract / paste
  • 2 cups almond flour
  • ¼ cup potato starch
  • 1 tablespoon baking powder

Garnish

  • Powdered sugar
  • Shelled pistachios

Instructions
 

  • In a bowl, blend together the eggs and sugar until nicely combined.
  • Mix in the oil, followed by pistachio butter, vanilla extract, almond flour, potato starch, and baking powder.
  • Pour into a pre-greased 8-inch pan before popping it into an oven preheated to 160°C / 325°F with the fan on for 35 minutes.
  • Once ready, take it out of the oven to cool down before garnishing it with powdered sugar & Shelled pistachios
