With Passover just around the corner, I have been preparing for the holiday by making delicious recipes that are kosher for Passover friendly. I was looking for a unique dessert to serve during this special occasion and decided to try my hand at a pistachio cake.

Passover is a Jewish holiday that commemorates the Exodus of the Israelites from Egypt. It is celebrated for eight days beginning with the 15th day of the Hebrew month of Nisan, which usually falls in March or April.

During this time, Jews commemorate the story found in the Torah by abstaining from eating leavened bread and observing other dietary restrictions. Passover is also a time to reflect on redemption and freedom as well as celebrate family, culture, and tradition.

As part of the celebration, families gather for festive meals where special dishes like creamy sweet potato bake and vegetable kugel are enjoyed.

This gluten-free and parve cake is a perfect way to celebrate Passover without having to worry about compromising on taste. It's also incredibly simple to make, so anyone can enjoy it!

Garnished with some powdered sugar and shelled pistachios, this pistachio cake is an eye-catching treat that is sure to impress your guests.

Tips for making the best gluten-free pistachio cake

Here are some of the best tips for making a moist and delicious pistachio cake:

Make sure to mix the sugar and eggs really well

This will ensure that your cake has a light, fluffy texture when baked.

Use the best quality pistachio butter you can find

The butter should be smooth and creamy. Look for a high-quality brand with no added sugar or preservatives. This will make all the difference in your cake’s flavor!

    Don't overmix the cake batter

When adding almond flour, mix just until combined. Overmixing will lead to a dense and heavy cake.

Mix olive oil into the batter

This will help give the pistachio cake a beautiful texture and additional moisture.

    Bake on low heat

Baking at low temperatures prevents burning or drying out of your pistachio cake.

Garnish with chopped nuts, fresh fruit, or melted chocolate

This is a great way to turn your pistachio cake into something even more special!

In the supermarket or baking supplies stores. There are many types of nut butters like almond butter, cashew butter etc..

I used a store bought product but you can place shelled pistachios in a food processor or a high-powered blender. Blend while you scrape the sides down. The consistency will turn moist, and then to a creamy and smooth texture.
