- 2 cups grated zucchini (about 2-3 medium zucchinis)
- ¼ cup bread crumbs
- ½ cup grated cheese (cheddar or mozzarella work great)
- 2 eggs
- Salt and pepper, to taste
Preheat your oven to 180°C (350°F) with the fan setting.
Grate the zucchini and squeeze out as much water as possible using your hands or a clean kitchen towel.
In a mixing bowl, combine the zucchini, bread crumbs, grated cheese, eggs, salt, and pepper. Mix until well combined.
Lightly oil your hands, then shape the mixture into small fritters and arrange them on a baking pan lined with parchment paper.
Bake for 15 minutes, then flip the fritters and bake for an additional 10 minutes, or until golden and firm.
