Ingredients
  

  • 2 cups grated zucchini (about 2-3 medium zucchinis)
  • ¼ cup bread crumbs
  • ½ cup grated cheese (cheddar or mozzarella work great)
  • 2 eggs
  • Salt and pepper, to taste

Instructions
 

  • Preheat your oven to 180°C (350°F) with the fan setting.
  • Grate the zucchini and squeeze out as much water as possible using your hands or a clean kitchen towel.
  • In a mixing bowl, combine the zucchini, bread crumbs, grated cheese, eggs, salt, and pepper. Mix until well combined.
  • Lightly oil your hands, then shape the mixture into small fritters and arrange them on a baking pan lined with parchment paper.
  • Bake for 15 minutes, then flip the fritters and bake for an additional 10 minutes, or until golden and firm.
  • Serve warm with your favorite dip and enjoy!
