Palmiers, also known as elephant ears or palm leaves, are delicious pastries made from puff pastry that are rolled in sugar and cinnamon and baked until they're golden and caramelized.
Preheat your oven to 190°C / 375°F. Line a baking sheet with parchment paper.
In a small bowl, mix together the granulated sugar and ground cinnamon until well combined. Set aside.
On a parchment paper, roll out the puff pastry into a rectangle about ⅛ inch thick.
Sprinkle about half of the cinnamon-sugar mixture evenly over the entire surface of the puff pastry.
Starting from one long edge, tightly roll the pastry towards the center. Repeat with the other long edge until the two rolls meet in the middle.
Place the rolled pastry in the refrigerator for about 30 minutes to firm up slightly. This will make it easier to slice.
Remove the rolled pastry from the refrigerator and use a sharp knife to slice it into ½ inch thick slices.
Dip each slice into the remaining cinnamon-sugar mixture, coating both sides generously.
Place the coated cookies onto the prepared baking sheet, leaving some space between each cookie.
Bake in the preheated oven for 15-20 minutes, or until the palmiers are puffed and golden brown.
Allow the palmiers to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, enjoy your delicious sugar and cinnamon palmiers!
