Place in a blender all the nuts and blend long enough to crush the nuts into smaller pieces but not completely, you still want to have some texture.
Add the pitted dates and blend them all together to a unified batter.
Transfer the date batter to a baking paper and place it in a row that you will shape soon into a log.
Spread the desiccated coconut on the baking paper near the date batter and then use the paper to roll the batter on the coconut (like rolling sushi).
Shape it with your hands to a nice roll.
Make sure the whole roll is coated well.
Wrap the roll with the baking paper and place in the freezer for 30 minutes to set.
Take out the roll and cut to individual discs/cookies.
