This time, however, I wanted to create something simple that makes a small portion and not a big cake. I am sharing a Date Nut Salami Roll recipe that is raw, vegan, and without sugar so it’s even a healthy treat to indulge.
There are many versions of desserts that look like salami sausage, usually, they include chocolate and dairy products, biscuits, etc. But this recipe has no dairy, no biscuits, and no chocolate. It's Parve and can fit a vegan diet if you are doing Veganuary (being vegan during January).
Ingredients
The ingredients for this date nut salami roll are simple - dates and nuts and it's coated with unsweetened shredded coconut. You can use sesame seeds to coat the roll or other seed types that you prefer if you don’t want to use coconut. The roll is very sticky and must be coated so you can handle it. Also, you can't cut it nicely into individual discs/cookies when it's not coated.

This date roll fits Tu Bishvat celebrations since dates are one of the 7 species mentioned in the Torah (shivat haminim) that Israel is blessed with. The other species are figs, grapes, olives, wheat, barley, and pomegranate. In Tu Bishvat, you want to eat at least some of the 7 species as a custom and other dried fruits and nuts.

Date Nut Roll
Ingredients
- 20 pitted Medjool dates
- Handful shelled pistachios
- Handful slivered almonds
- Handful pecan nuts
For coating:
- 4 tablespoon unsweetend desiccated coconut
Instructions
- Place in a blender all the nuts and blend long enough to crush the nuts into smaller pieces but not completely, you still want to have some texture.
- Add the pitted dates and blend them all together to a unified batter.
- Transfer the date batter to a baking paper and place it in a row that you will shape soon into a log.
- Spread the desiccated coconut on the baking paper near the date batter and then use the paper to roll the batter on the coconut (like rolling sushi).
- Shape it with your hands to a nice roll.
- Make sure the whole roll is coated well.
- Wrap the roll with the baking paper and place in the freezer for 30 minutes to set.
- Take out the roll and cut to individual discs/cookies.
- Have a piece and enjoy!
