    If you are on a gluten free diet or are trying to reduce your carb intake but still enjoy a tasty snack, this recipe is for you. These delicious crackers are made with very few ingredients and the outcome is surprisingly good. Most, if not all, crackers you buy are made with wheat flour and usually some preserving ingredients that you really don’t want in your diet. These homemade crackers are very easy to whip up and you know exactly what's in them. Plus, these crackers are more filling and can also replace bread in any meal.

    Ingredients

    The main ingredient for these gluten free crackers is almond flour. I like to use it in almost all my gluten free baking. It's healthier, low on carbs and you can find it in any supermarket.

    In addition to the almond flour, you add an egg, salt and olive oil.

    The crackers here are basic savory ones. You can add any topping you prefer and serve the crackers with many different dips too. Any seed like sesame seeds, pumpkin seeds, sunflower seeds or even spices can upgrade the crackers.

    You can whip up an everything bagel seasoning batch and add it on top of the crackers before baking. If you like spicy flavors, add chili flakes. Coarse salt can also be a topping. If you want the crackers more on the sweeter side, add one teaspoon of cinnamon and two teaspoons of your preferred sweetener (sugar or sugar replacements powder) to the batter. If you do make the crackers sweet, make sure to use olive oil that has a mild flavor rather than strong to get a tasty outcome.

    To make the seeds stay on the crackers after sprinkling them on the crackers, I pinch them down on each cracker, you can also roll them into the dough. If you choose to add spices, just add them when mixing all ingredients to the batter itself. Seeds can also be added to the dough directly and not as topping if you prefer.

    INSTRUCTIONS

    The process is pretty similar to making cookies. Mix all ingredients and roll the dough. Then cut shapes and bake. I find it easier to roll the dough between 2 parchment papers. Then remove the top parchment paper and cut the rolled dough to small squares. I used a pizza cutter to cut the dough, you can also use a regular knife. Then you transfer the cut crackers to a baking pan and bake the same as you would with cookies. Baking time is not long – 12-15 minutes. The crackers might turn brown quickly, pay attention to the oven after 10 minutes of baking.

    These crackers are crispy and delicious. You can enjoy them with a cheese plater or a charcuterie board. They go with any dip or spread. The crackers are dairy free (parve) and fit any occasion.

    Recipe yields approximately 40 crackers, depending on the size you make them.

    STORAGE

    The crackers are saved best in an airtight container for up to a week but most probably you will finish it before. If needed, you can re-crisp them in the oven for a few minutes.

    Ingredients
      

    • 2 cups  almond flour
    • ¼ teaspoon salt
    • 1 egg
    • 2 tablespoon olive oil
    • 2 tablespoon seeds for topping – whatever you like, I used black sesame seeds.

    Instructions
     

    • Set the oven to 170°C/ 350°F with the fan.
    • In a mixing bowl, add the almond flour, salt, egg, and olive oil.
    • Mix well until you get chunks of dough.
    • With your hands, unify the chunks into one ball of dough.
    • Roll the dough as thin as possible between 2 parchment papers.
    • Remove the top parchment paper and cut the dough into small rectangles with a pizza cutter or a knife.
    • Transfer the cut crackers to a baking pan lined with baking paper or a cookie sheet.
    • Sprinkle the seeds on the crackers and with your hand pinch them down to the crackers to stick.
    • Bake for 12-15 minutes.
    • Cool at room temperature for 15 minutes - the crackers get crispy when cooling.
    • Have some crackers and enjoy!
