    Carrot Parsley Salad

    There is always room for another salad dish on our table. This one, carrot parsley salad, is super easy to create and tastes very good too.

    With just a few ingredients, you can serve this salad to your family in no time. I have shared other salad recipes that require just a few ingredients. For example, the tomato basil salad or the cucumber salad. I find that during every changing season it's better to use the current season’s produce and create fresh salads to enjoy the best, fresh flavors.

    To make this yummy salad you will need carrots, parsley, olive oil, lemon juice and salt. The process of making the salad starts by simply grating the carrots. Then mix the grated carrots with the rest of the ingredients and that's it, serve and munch.

    To grate the carrots you can use a mandolin, a food processor or do it by hand with a simple grater. To chop the parsley I like to use herb scissors. I find it easier and I like the size of the chopped herbs when using it.

    Carrots - are considered a fall vegetable and as we get closer and closer to the season, it's time to get ready with some delicious carrot recipes. Carrots are a good source of several vitamins and minerals including biotin, potassium and vitamins A and B6. Carrots are the perfect snack. They are crunchy, low in calories, and sweet.

    Carrots are associated with heart and eye health and can improve digestion. Carrots are also one of many root vegetable and they come in several colors, sizes, and shapes, all of which are great additions to a healthy fall meal. For this recipe I used only regular orange carrots although it can be made with other types too.

    Parsley – rich with vitamins and antioxidants. It adds flavor and color to this salad. If you prefer to use cilantro instead it can also work, but it has different flavors. I personally prefer parsley over cilantro.

    This carrot salad has a bit of sweet taste from the carrots and is balanced with the lemon juice and fragrant herby taste of the fresh parsley. Regarding spices, in this recipe, I only use salt and didn’t add black pepper, you can add some if you feel it's needed.

    I publish this recipe just before Yom Kippur but this dish can fit any holiday and any other meal too. If you started planning your Sukkot menu already, this salad is a perfect addition.

    This carrot parsley salad is crunchy and full of flavor, it's perfect for welcoming the fall season and fits any big holiday meal.

    Ingredients
      

    • 5 medium carrots
    • 4 tablespoon chopped parsley
    • 2 tablespoon olive oil
    • ⅓ cup lemon juice
    • ½ teaspoon salt or add more to your taste

    Instructions
     

    • Peel and grate the carrots.
    • Add grated carrots to a bowl.
    • Add the rest of the ingredients and mix well.
    • Serve and Happy Holidays!
