Simple carrot salad recipe
There is always room for another salad dish on our table. This one, carrot salad, is super easy to create and tastes very good too.
With just a few ingredients, you can serve this salad to your family in no time. I have shared other salad recipes that require just a few ingredients. For example, the tomato basil salad or the cucumber salad. I find that during every changing season it's better to use the current season’s produce and create fresh salads to enjoy the best, fresh flavors.
How to make shredded carrot salad
To make this yummy salad you will need carrots, parsley, olive oil, lemon juice and salt. The process of making the salad starts by simply shredding the carrots. Then mix the grated carrots with the rest of the ingredients and that's it, serve and munch.
How to grate carrots
To grate the carrots you can use a mandolin, a food processor or do it by hand with a simple grater. To chop the parsley I like to use herb scissors. I find it easier and I like the size of the chopped herbs when using it.
Ingredients
Carrots
They are considered a fall vegetable and as we get closer and closer to the season, it's time to get ready with some delicious carrot recipes. Carrots are a good source of several vitamins and minerals including biotin, potassium and vitamins A and B6. Carrots are the perfect snack. They are crunchy, low in calories, and sweet.
Carrots are associated with heart and eye health and can improve digestion. Carrots are also one of many root vegetable and they come in several colors, sizes, and shapes, all of which are great additions to a healthy fall meal. For this recipe I used only regular orange carrots although it can be made with other types too.
Parsley
Rich with vitamins and antioxidants. It adds flavor and color to this salad. If you prefer to use cilantro instead it can also work, but it has different flavors. I personally prefer parsley over cilantro.
This carrot salad has a bit of sweet taste from the carrots and is balanced with the lemon juice and fragrant herby taste of the fresh parsley. Regarding spices, in this recipe, I only use salt and didn’t add black pepper, you can add some if you feel it's needed.
Tips to ensure your carrot salad turn out perfectly delicious
Choose fresh, firm carrots
Opt for medium-sized carrots that are firm and free from any signs of wilting or softness. Fresh carrots will have a sweeter and crunchier taste, making your salad more enjoyable.
Grate the carrots finely
Use a mandolin, a box grater or food processor with a shredding attachment to finely grate the carrots. This ensures a consistent texture and allows the flavors of the dressing to evenly coat the carrot strands.
Play with the dressing
While the recipe suggests olive oil, lemon juice, and salt, feel free to experiment with the dressing. You can add a touch of honey for sweetness, a splash of apple cider vinegar for tanginess, or a sprinkle of your favorite herbs and spices to enhance the flavor profile.
Let it marinate
For even more flavor, let the shredded carrot salad marinate in the dressing for at least 30 minutes before serving. This allows the carrots to absorb the flavors and results in a more well-rounded taste.
Add some crunch
Consider adding some toasted nuts or seeds like almonds, walnuts, or sunflower seeds to the salad. Not only do they add a satisfying crunch, but they also provide extra nutrients and depth to the dish.
Customize with additional ingredients
While the base recipe is delicious on its own, you can personalize the salad to your liking. Toss in some raisins for natural sweetness, chopped fresh herbs for added freshness, or diced bell peppers for extra color and texture.
Serve it chilled
This shredded carrot salad tastes best when served cold. Refrigerate it for a while before serving to intensify the flavors and refresh your palate.
Pair it with other dishes
This salad complements a wide range of main courses, from grilled chicken to roasted vegetables. It also works well as a topping for sandwiches or wraps, adding a delightful crunch and taste to your meals.
Double the recipe for gatherings
If you're hosting a holiday gathering or potluck, consider doubling the recipe as this salad is likely to be a crowd-pleaser, and you don't want to run out!

While fresh lemon juice offers the best flavor, you can use bottled lemon juice if it's more convenient. However, keep in mind that bottled lemon juice may have preservatives and might not taste as bright and fresh as freshly squeezed lemon juice.
If you prefer a milder tang, you can reduce the amount of lemon juice in the dressing or add a bit more olive oil to balance the flavors. Additionally, adding a small amount of honey or a pinch of sugar can help to counteract the acidity and create a more balanced taste.
Yes, you can use different oils like avocado oil, grapeseed oil, or vegetable oil as alternatives to olive oil. Each oil will bring its unique flavor to the salad, so feel free to choose the one you prefer or have on hand.
While the salad is traditionally served chilled, there's no strict rule against serving it warm if you prefer. However, keep in mind that serving it warm may soften the carrots slightly and alter the overall texture and taste.
