After all the scrumptious cake and dessert recipes I post here, I wanted to write about something a little more light and healthy – but still insanely tasty. Salad for dinner is always a nice alternative, especially in the heat of summer when all you want is a light and easy meal. Usually, most of us make salad only with vegetables; however adding just one fruit can really lift and improve the overall taste.
When you pick a pear, try to use one where the "neck" is softer - that means that the pear is ready to eat. If a pear is too solid then not only is it not ready for consumption, but it also won’t taste nice.

To give the salad a boost in flavor, I added feta cheese. The feta goes well with the pear and green baby leaves, just give it a try! You'll be surprised by how much you like it. Of course you can add any type of cheese that you like, it doesn't have to be feta.
Here is the recipe for this easy green pear salad:

Green Pear Salad
Ingredients
- 1 pear thinly sliced
- 4 cups baby leaves washed and dried
- 1 cucumber sliced
- ½ cup Feta cheese crumbles
For the dressing:
- 2 tablespoon olive oil
- Salt and pepper (as much as you like)
- Juice of one lemon
Instructions
- Combine baby leaves and pear in a salad bowl. Add cucumber, and feta cheese.
- Season with olive oil, lemon juice, salt and pepper.
- Dig in and enjoy!
