Summer is here! The nights are longer and the days are warmer so it's the best time to host friends with delicious drinks and tasty snacks. Since this is July and my newsletter recipe, I chose not to make you turn on the oven to bake something in this heat - you only need to use the stove top for a bit and a blender so you can't say I am not considerate, lol
This time I am sharing a recipe for easy and yummy dip that goes with your favorite potato chips or some other chips that you prefer. I like to eat veggie chips made out of beets and sweet potatoes, they look so colorful and nice and even make you feel healthier eating them - although they aren’t really that healthy.
This dip is vegan, which can help if you have a vegan friend or you are hosting someone who avoids dairy products. The dip is made out of red lentils and that also makes it some kind of healthy dish. Win-win ☺
The other ingredients are tahini, lemon, garlic, salt and pepper, I am sure you have all of these in your kitchen already. For the garnish, I used chives, but you can use any herb you like.
This dip can also add a touch of flavor to your sandwich or you can eat it like Hummus or as a sauce to your Buddha bowl. Don’t know what a Buddha bowl is? Check out my Buddha bowl recipe and learn all about it.

Here is the recipe for this yummy red lentil dip:
Lentil Dip
Ingredients
- 1 cup red lentil
- Water - just up to cover the lentils in a pot
- 2 tablespoon water (for later to thin the dip a bit)
- 4 tablespoon tahini
- Juice of half a lemon
- 2 garlic cloves minced
- Salt and pepper by your taste
For garnish:
- Herbs
Instructions
- In a pot, place the red lentil and cover with water.
- Cook the lentils on high for 10 minutes until they start to soften.
- Transfer the cooked lentils to a blender with the 2 tablespoons of water.
- Add the rest of the ingredients to the blender and blend to a smooth paste.
- Taste the dip and add more seasoning if needed.
- Transfer to a bowl, garnish with herbs and serve with chips and drinks.
