It might not feel like it, but Rosh Hashanah is coming in no time and it’s time to start thinking about apple cakes for dessert! This easy recipe that I’m sharing with you today is delicious and won't take a long time to whip up.

Apple is one of the main holiday symbols and we always have one apple cake for dessert in my family. I already shared some other options last year so you do have another option to choose from when creating your apple dish.
The cake is very moist and has a rustic texture thanks to the apple cubes in it.


To make this apple and oat cake you will need- all-purpose flour, quick oats, apples, eggs, sugar, baking powder, cinnamon, vanilla paste or extract, and soy milk (you can use other non-dairy milk you prefer or water/orange juice). The process is simple and you only need to mix everything together then put it in the oven. That's it!
The amount of flour in the recipe is not very big, only ½ cup because we use quick oats too. The quick oats are adding more texture and flavor.
The cake is parve and obviously can fit any other day as well. The cake is not big and if you need more of it, double the ingredients. Since we still don’t know how we will celebrate the holiday with the Coronavirus, you might need a smaller dessert.

Apple Oat Cake
Ingredients
- ½ cup all-purpose flour
- 1 teaspoon baking powder
- 2 tablespoon soy milk (or other non-dairy milk/water/orange juice)
- 2 eggs
- 2 apples peeled and cubed
- ½ cup sugar
- ½ cup quick oats
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract/paste
Instructions
- Heat the oven to 170°C / 350°F with the fan.
- In a bowl, mix all the ingredients.
- Grease a loaf pan.
- Transfer the batter to the pan.
- Bake for 45-50 minutes.
