    Crispy, cheesy, and irresistibly snackable — these Parmesan Cheese Bites are the perfect homemade treat for any occasion. Made with real Parmesan, buttery dough, and a mix of crunchy seeds on top, they’re golden on the outside and soft inside.

    With Hanukkah over, I found myself with some extra sour cream. Instead of throwing it away, I wanted to use it! So this is how I got to baking these delicious parmesan cheese bites, which are more or less like savory cookies. With a few simple ingredients and half an hour, you can be munching on these parmesan cheese bites. It's perfect for noshing with a drink or just as is. Either way, you won’t be able to stop scarfing these down so it’s quite a dangerous snack!

    I call these savory cookies "parmesan cheese bites" since the main flavor that you taste is the parmesan cheese. Now, you can use another hard cheese that’s similar like Grana Padano.

    Ingredients

    To make these parmesan cheese bites, you will need all-purpose flour, sour cream, baking powder, grated parmesan cheese, butter, salt, water, and an egg. For garnish, you will need some seeds. I used sesame seeds, nigella seeds, and flax seeds.

    Process

    The recipe is simple to make, as always, and also rather quick to make. A definite win-win in my book! You just mix all ingredients in one bowl to create a dough. Roll the dough and cut it into little squares. The size of the squares is up to you, I made them very small - 1x1 inch. Brush the squares with egg wash and sprinkle seeds on top. I kept the parmesan cheese bites close to each other and didn’t split them like you would with cookies. Then you bake for 20-25 minutes and once it’s cooled down, you can start munching! The final outcome is very rustic actually and just looks homemade. You can have it at any time of the day.

    This little nibble is also a good option for guests to enjoy but this year, we don’t have any thanks to COVID.     Can I use a different cheese instead of Parmesan?

    Yes! While Parmesan gives the best flavor and crisp texture, you can substitute it with other hard cheeses like Grana Padano or Pecorino Romano. For a milder taste, try using cheddar.

    Can I make them without eggs?

    Yes — the egg is only used for brushing on top to help the seeds stick and give the bites a shiny finish. You can skip it or brush with a little milk or melted butter instead.

    Can I make these gluten-free?

    Yes, simply use your favorite gluten-free all-purpose flour blend. The texture might be slightly different, but they’ll still taste delicious!

    Do I need to use all the seeds on top?

    Not at all. The mix of sesame, nigella, and flax seeds adds crunch and flavor, but feel free to use your favorites or skip them altogether. Even plain, these bites are delicious!

    Can I use olive oil instead of butter?

    Butter gives these bites their rich, flaky texture, but if you prefer, you can substitute with a mild olive oil for a slightly different flavor and a bit less richness.

    Can I make them smaller or larger?

    Yes — that’s one of the best parts of this recipe! Cut the dough into tiny squares for bite-sized snacks or into larger rectangles for cheesy crackers. Just keep in mind that baking time may vary slightly depending on the size.

    How do I store Parmesan Cheese Bites?

    Once cooled, store them in an airtight container at room temperature for up to 3 days. For longer storage, keep them in the fridge for up to a week or freeze for up to 2 months.

    Can I make these in advance for a holiday meal?

    Yes! You can easily prepare them a day or two ahead of time. Store in an airtight container once cooled, and before serving, you can quickly reheat them in the oven for a few minutes to bring back that fresh-baked crispness.

    What makes these bites perfect for Hanukkah or Shavuot?

    Since they’re rich, buttery, and full of cheese, these bites are a lovely dairy treat — perfect for holidays like Shavuot or Hanukkah when we enjoy dairy dishes. They make a great addition to a festive table or snack platter!

    Ingredients
      

    • 1¾ cups all-purpose flour
    • 2 teaspoon baking powder
    • ⅔ cup grated parmesan
    • ¼ cup sour cream
    • ½ teaspoon salt
    • 4 tablespoon water
    • 1 stick butter, softened

    For garnish:

    • 1 egg beaten
    • Handful sesame seeds
    • Handful nigella seeds
    • Handful flax seeds

    Instructions
     

    • Heat the oven to 170°C / 350°F.
    • In a bowl, mix all ingredients to create a dough.
    • With your hands, kneed the dough and transfer it to a flat surface.
    • Place a baking paper and roll the dough into a big square.
    • Transfer the baking paper with the rolled dough to a baking pan.
    • With a knife, cut the dough into small bite-sized squares.
    • Brush with the beaten egg and sprinkle the seeds.
    • Bake for 20-25 minutes, until it gets golden brown.
    • Cool at room temperature.
    • Have a few bites and enjoy!
