There is tons of hype now around no carbs foods and Paleo diet, or even the cave man menu. So I decided to throw in my own version of healthy noodles, using zucchini! And these “Zoodles” are a perfect idea if you are trying, or have tried, one of the diets above.
Make sure that the zucchini is cut into very thin strips, like spaghetti, and after a really short sauté, the Zoodles are delicious - you might even feel like you actually eating regular pasta. My recipe only requires 4 ingredients so it’s very quick and easy.
For the cut, I used a spiral cutter and it broke after one use so I cannot recommend it, however I do recommend a grater that has the option to create juliennes, which is the shape we want. Hold the zucchini and try to use the long side to create long juliennes.
For the sauce, I used a shortcut – a readymade pesto sauce. Of course a homemade pesto will be delicious as well, the decision is yours. If you have the time to make your own pesto, go for it, if not, readymade is just as good. The quick sauté surprisingly turns the stiff zucchini into flexible spaghetti. You can also try this with carrots or other firm vegetables. No other vegetables have a recipe named after them, like the zucchini Zoodles, so I have no idea if those other vegetables are any good.
