As far as refreshing desserts go, lemon bars are always at the top of the list. The citrus taste is sharp and this dessert is heaven for your taste buds. The recipe is very easy and the outcome is delicious!
If you want, you can also try to replace the lemon with orange (also the zest) and you get orange bars that are a very nice dessert too.
Lemon bars are a very good choice for outside picnics, as they are moist, already cut and easy to carry in a box.
The baking of these bars is split into 2 parts: first, you bake the base alone and then add the filling on top of the baked base and continue baking.
If you need the dessert to be parve (kosher non dairy) you can switch the butter with coconut oil. Use purified coconut oil if you do not want the taste of coconut in the dessert, though it can add a tropical vibe.
