It’s January! 2020 is finally over! Like most, I am hopeful that 2021 will allow us to return to our normal life, especially now that a vaccine is available. 2020 was a crazy and different year, we all learned something new about ourselves, and we all overcome some difficulties.

Many people started cooking and baking more - mostly because we were all stuck at home due to lockdowns and quarantines. And let’s not forget that the year also forced us to adapt our cooking so many trends popped up! Especially with bread and baking challah when no one could find bread flour. People that never baked before started and found out that they love it! We had Dalgona coffee, mini cereal pancakes, and other variations of it. People were learning to grow veggies on their windows. And finally, the last trend of the year was hot chocolate bombs which I want to try out myself so stay tuned! Which food trend was your favorite? What did you learn to cook or bake this year? Let me know!

Since 2020 and its madness, we all probably ate too much and went crazy with decadent dishes like my chocolate babka, for example. As a result, I wanted to start the year with something healthy. Every year we all write down our New Year resolutions and it’s usually focused on eating healthy. I think, that now in 2021, people are inspired to change their habits. So, if you’re riding that healthy train, I have the perfect recipe for you!

This simple and delicious smoothie is not a banana smoothie. So many smoothie recipes use bananas and if for some reason, you want to enjoy a banana-free smoothie then this recipe is for you!

The ingredients for this yummy smoothie are apples, dates, quick oats, and milk. Yes, that’s it, only 4 ingredients!

I used sugar-free soy milk so it is also dairy-free, but you can use any milk you prefer. This smoothie has no sugar in it at all and the sweetness comes from the dates and apples. I find it very tasty like this, but if you must add some sweetener, use maple syrup to stay on the healthy side.

The process of making the smoothie is by starting to mix the ingredients and letting it sit for 5 minutes so the oats can absorb the liquid and become softer. Then you blend it to your favorite texture, I kept it with little bits of apple and dates and didn’t make it fully smooth because I like this texture. When serving the smoothie, I added a sliced apple for garnish, you can add any other fruit you want or omit it completely.

The bowl I used is a coconut bowl that I got from the Coconut Bowls website. The bowl is made from coconut shell which is natural waste and is handcrafted into an eco-friendly product. If you want to start this year by doing something good, try using this kind of bowl and help our planet! It's sustainable and beautiful. Plus, they claim the bowl can last a lifetime!

I joined as a coco ambassador to support their health journey to a sustainable future for people and the plant.
