August is here and that means, the heat is at its peak! Which also means, you aren’t in the mood to bake or stay in the kitchen for too long. But don’t worry, I have the perfect recipe that makes being in the kitchen a dream! Blueberry yogurt popsicles! All you need are 3 ingredients and you and your family will beat the sizzling heat like pros. Now, doesn’t that sound like a relief?!
I am sure you guessed by the recipe’s name, two of the ingredients - blueberries and yogurt. YUM! The third ingredient is maple syrup so that way, the popsicles are sweet. I used 4 tablespoons of maple syrup, but you can add more or less depending on your taste. If you want, you can also use honey or use powdered sugar and in the same amount. The great thing about homemade popsicles is that you control the ingredients and know exactly what is in your popsicles.
The recipe is dairy because I used yogurt, however if you need it to be non-dairy then you can use soy yogurt or any other non-dairy yogurt that you like.
I wanted the popsicles to have some kind of marble look because I like it and think it's pretty! I used 2 different bowls and didn’t mix everything together, but if you aren’t bothered by it, you can mix everything in one bowl and create purple, unified popsicles.
I used popsicle silicone molds, if you don’t have any, you can use cups instead but it might be harder to release the popsicles. If you don’t have popsicle sticks you can use teaspoons.
If you are looking for other frozen options to cool yourself, check out my homemade ice cream recipe, vegan ice cream recipe or orange creamsicles recipe. All are very easy and quick to make, delicious of course, and will help you survive the summer heat!
