    To date, I have shared 3 different chocolate truffle recipes and I’m excited to share another one!

    As February approaches, the anticipation for Purim festivities builds. To add a touch of joy and offer a delightful yet healthy treat, I've crafted a recipe for you to relish—introducing these delectable Chocolate Tahini Truffles.

    How to make dark chocolate truffles

    To whip up these tasty tahini truffles, you only need 2 ingredients (plus, cocoa powder for coating). The ingredients include dark chocolate and tahini, it couldn’t be simpler. I used cocoa powder for the classic coating, you can add some sea salt flakes too. You can coat the truffles with unsweetened desiccated coconut, matcha powder, beet powder, sesame seeds, flax seeds, etc.

    The process of making the truffles is not that complicated either. First, melt the chocolate. I did 30 second rounds in the microwave. Then you add the tahini, mix well and place it in the freezer to set. Then take small portions of the batter and with your hands, form balls. Roll the balls in your chosen coating and that’s it! No oven and nothing complicated. If you are looking for an afternoon activity with your kids, this will keep them busy for a while. Just be prepared to have some chocolate-covered kids though, haha!

    For a convenient twist on the traditional truffle-making process, consider an alternative method that involves pouring the luscious chocolate tahini batter into a tin. Once the mixture is prepared, simply transfer it into a flat tin and spread it evenly. Place the tin in the freezer and allow the mixture to set for about half an hour. The result? A firm and decadent chocolate tahini layer that can be effortlessly cut into squares, presenting a unique and visually appealing alternative to the classic rolled truffle shape. This fuss-free approach not only streamlines the preparation but also offers a modern and elegant presentation for those who prefer squares over spheres. Whether you choose to roll into balls or opt for the square-cut variation, the indulgent flavor of these Chocolate Tahini Truffles remains an irresistible delight.

    The tahini I used is the whole tahini paste. It's made from unpeeled sesame seeds and is considered healthier. The chocolate I used is dark chocolate with 70% cocoa. The combination of dark chocolate and tahini creates a unique flavor that resembles halva but is a bit different still.

    These truffles are vegan and therefore parve. This treat can fit as a snack or you can wrap some and send it to a friend as an edible gift, I know I would be happy to get a bag of truffles!

    Quality Ingredients Matter

    Select high-quality dark chocolate and raw tahini for the best flavor. The richness of these ingredients significantly influences the final taste of your truffles.

    Melting Chocolate

    When melting chocolate, use the microwave in short 30-second bursts to avoid overheating. Stir well between each interval until the chocolate is smooth and completely melted.

    Tahini Integration

    Ensure a smooth blend by adding the tahini gradually to the melted chocolate, stirring consistently. This step contributes to the creamy texture of the truffle center.

    Chilling Time

    Allow the mixture to set in the freezer for at least 30 minutes. This not only firms up the batter for easy handling but also intensifies the flavors.

    Cocoa Powder Coating

     Roll the truffles in cocoa powder right after shaping them. This not only adds a delightful outer layer but also prevents them from sticking together.

    Alternative Shapes

    Room Temperature Handling

    If the truffle mixture becomes too soft to handle, place it back in the freezer for a few minutes to firm up. This ensures easier shaping.

    Besides cocoa powder, try coating your truffles with crushed nuts, shredded coconut, or even a drizzle of melted white chocolate for variety.

    Storage

    Store the truffles in an airtight container in the refrigerator. They can also be frozen for longer storage, but bring them to room temperature before serving for the best texture and flavor.

    Can I use milk chocolate instead of dark chocolate in this recipe?

    Can I substitute other nut butters for tahini?

    How long do these truffles stay fresh?

    Stored in an airtight container in the refrigerator, these truffles remain fresh for about 1-2 weeks. For longer storage, freeze them, but bring them to room temperature before serving.

    Ingredients
      

    • 7 oz. (200 grams) dark chocolate
    • 1 cup whole raw tahini
    • 4 tablespoon cocoa powder - for coating the truffles

    Instructions
     

    • In a bowl, melt the chocolate in the microwave in 30 second rounds until the chocolate is completely melted.
    • Add the tahini to the melted chocolate and mix well.
    • Place the bowl in the freezer for half an hour to set.
    • Prepare a plate with the cocoa powder and set aside.
    • Take a small portion of the chocolate batter with a teaspoon.
    • With your hands, create small balls from the batter.
    • Roll the balls in cocoa powder.
    • Have a truffle or two or more and enjoy!
