Rosh Hashanah is over and now it's time to prepare for Yom Kippur. Fasting for 25 hours is not easy and should be planned ahead of time.
What I usually do is plan out the cookies that I will enjoy with a cup of tea when the fast is over. You typically want to have something small so you don’t overwhelm your body with food and these little bite size cookies are perfect for that.
With only 5 ingredients, you can whip up these cookies in no time. You will need smooth peanut butter (not one with chunks or pieces of whole peanuts in it), oat flour, maple syrup, baking powder, and baking soda.
The process of actually making the cookies once you have all the ingredients in front of you is simple and straight forward- mix, roll to small balls and bake for a short time.
Oat flour - For this recipe I made homemade oat flour. If you want to make oat flour, all you need to do is blend oats on a high speed blender or food processor. You simply blend until it become powder. You can buy oat flour too but it's also very easy to make some yourself. Pay attention that not all oats are gluten free. Make sure you use gluten free oats if you serve the cookies to someone who can't tolerate gluten.
Peanut butter – one of the common spreads that many people love. It's better to use peanut butter that has no sugar in it or other unhealthy ingredients. Peanuts are a good protein source and they are also low on carbs and contain fiber, minerals and vitamins.
Maple syrup – the cookies don’t contain refined sugar, only a small amount of maple syrup. It adds to the cookie flavor and balance the peanut butter.
These small cookies are perfect as a snack or with coffee or tea. The cookies does grow a bit while baking thanks to the baking powder and baking soda. The cookies melt in your mouth and are so addictive, you can't stop at one.
The cookies does not contain any dairy products or eggs. In addition, the cookies are gluten free as long as you use certified gluten free oat flour. It’s the perfect cookies for many people on different diets. If you are not a big fan of peanut butter, you can switch it to tahini or chocolate spread but these will change the cookie flavors completely.
These peanut butter cookies can fit any holiday meal or party, they are easy to whip up and kids can help too.
Recipe yields approximately 28 small cookies, depend on the size you make them.
