Everybody knows the kugel or kigel (depending on your origins) and there are many versions to this casserole type dish. This recipe is a bit lighter because this kugel is made mainly of vegetables. During Passover, we don’t eat lokshen (egg noodles) and I didn’t want to use only potatoes for my holiday kugel.
The vegetables I used are sweet potato, carrots, zucchinis and as I mentioned before - potato. I didn’t add onion but if you want, you can add some. You can call this dish a vegetable quiche if you prefer because it is some sort of quiche, just with no dairy ingredients (parve).
Usually, in quiche recipes you use flour as one of the ingredients but because this kugel is kosher for Passover, I used wet broken matzos instead.
Often, kugel is a sweet dish but I wanted mine more savory and not sweet. Usually to make the kugel sweet you add raisins, cinnamon and sometimes sugar.
Because my kugel is savory and made with vegetables, it is a healthy side dish for Passover alongside the heavy, main dishes.
To make the kugel, you don’t have to use complicated methods, simply grate the vegetables, mix with the other ingredients and bake. I didn’t even use a blender!
