What are chaffles?

If you have never heard the term "Chaffles", it simply means cheese waffles. YUM.

I only heard about it recently but I read this is something that was created about two years ago, by people on the keto diet. Since in keto you barely consume carbs, there are special recipe variations to fit the diet.

These waffles are made with keto friendly ingredients and only involve two 2 ingredients – an egg and shredded mozzarella cheese.

Chaffles are considered like keto bread or keto buns. I know it doesn’t sound like it can work, or maybe it sounds like an omelette or scrambled eggs, but it is just the perfect combination! Plus, the waffle iron makes it crispy and super satisfying, and it is also filling.

As I continue my gluten free diet and reducing carbs, this recipe fits my diet perfectly. I tested it many times and it has become my favorite dish lately. Chaffles are a great "carb” replacement for breakfast or dinner when you’re craving waffles or some bread and they are also great for using as sandwiches bread or gluten free pizza base crust.

As I mentioned already, to make these cheese waffles you only need 2 ingredients: 1 egg and ½ cup shredded mozzarella cheese. I tested the recipe with an addition of 1 tablespoon of almond flour, the outcome was more firm and holds the shape better. It's optional to add this if you feel the chaffles are a bit too mushy. Another ingredient that can be added is cream cheese, I read it makes the batter more unified. If you are adding cream cheese it needs to be melted first so you can mix it in easily. I haven't tried this addition yet, but I keep testing ingredients every time I make chaffles.

This recipe is super easy and all you need in order to make it is a waffle iron (a chaffle maker) to cook the waffles. If you don’t own a waffle maker you can cook it in a pan too but the outcome will be more like pancakes and not a waffle. Soon there will be many shop sales so maybe it’s time to purchase a waffle maker or mini waffle maker - it's so worth it.

Another thing to mention about that is that this recipe is perfect as a Passover breakfast since its flourless waffles. Maybe you want to consider purchasing a waffle maker for your kosher for Passover kitchen tools set.

Eggs - Eggs are one of the most nutritious foods. They contain brain nutrients and powerful antioxidants that protect your eyes. Seeing as how this recipe only requires 2 ingredients I don’t recommend trying to change it. If you still want to change the eggs, look for vegan chaffle recipes. If you still consume eggs but not a fan of an eggy flavor you can use 2 egg whites instead of one whole egg, I didn’t tried this swap yet because I didn’t felt these chaffles had an eggy flavor.

Cheese – I used mozzarella cheese. Cheddar cheese or any other hard cheese that melts works with this recipe too. Mozzarella usually has less strong flavor so it fits to more uses of the chaffles and to the sweet ones in particular. Stronger cheeses like cheddar fits the savory uses.

For extra crispy chaffless, I add a bit of cheese before I ladle the batter to the waffle iron and also on top of the batter before I close it to cook. You can add more shredded mozzarella or finely grated parmesan or other cheese you want to make the chaffless crispier.

Pay attention to the amount of salt in the cheese you use, some are saltier than others and this defines if the chaffle are very salty or not. I tried three different brands of mozzarella and the outcome did taste different so test and see what you like. The cheese needs to be shredded finely or grated into small pieces to avoid cheese lumps in the cooked chaffles. You can use store-bought shredded cheese or grate it yourself.

The outcome of this super simple recipe is crispy perfect cheese waffles. If you want the waffles to hold their shape better I recommend you add 1 tablespoon of almond flour to the batter.

How to serve the chaffles:

These basic chaffles are delicious on their own but they can also be upgraded to more savory or sweet flavors, with some additions. Chaffles are very versatile, if you prefer a sweet breakfast have it with sugar-free maple syrup, cut fruits, cinnamon, or anything you like and included in your diet.

For savory flavors you can add to the batter more cheese, spices like garlic powder, onion powder, Italian seasoning, vegetables, etc. here are some options for different servings of the chaffles:

  1. You can have these chaffles just like you would have regular waffles with maple syrup and a little butter to melt on them.
  2. You can schmear the chaffles with cream cheese and sprinkle some everything bagel seasoning like a bagel or as a savory breakfast with cream cheese spread.
  3. These chaffles can also be a pizza base crust. Simply add tomato sauce and more cheese on the cooked chaffles top and bake them all together. If you choose to use the chaffles as a pizza crust, it's recommended that you add 1 tablespoon of almond flour to the batter.
  4. You can use chaffles as sandwich bread and make a chaffle sandwich. This recipe makes plain chaffles without any flavor additions so you can use it for any kind of sandwich you like sweet or savory.
  5. Chaffles can go along with salad or as a side to soup. You can dip the chaffles in the soup - yum!
  6. Chaffles can be the base for avocado toast.
  7. You can cut the chaffles up into strips and dip in syrup like French toast sticks.

Can you freeze chaffles?

Yes, you can freeze chaffles. Another option is to keep it in the fridge for up to 5 days. Once you’ve let the chaffles cool, you can store them in an airtight container in the refrigerator or freezer.

To reheat the chaffles place them in the toaster or you can microwave them for 30-60 seconds, or in the oven at 180/350 degrees. Chaffles can be served hot or cold, I prefer to have them hot.

The recipe yields approximately 2 cheese waffles, it depends on your waffle iron size. If you are making these chaffles for more than one person, double or triple the ingredients. This recipe only created 2 waffles in my waffle iron, in smaller/ mini waffle makers it can be 4 small / mini waffles. The chaffles puff up in the iron waffle and although it might look like they will come out tiny they do grow while cooking.

Ingredients:

  • 1 egg
  • ½ cup shredded mozzarella cheese (plus more for extra crispness if desired)
  • 1 tablespoon almond flour – optional for more firm waffles

Preparation:

  1. Spray your waffle iron with cooking spray or brush with melted butter and preheat it by the manufactory’s directions.
  2. In a mixing bowl beat the egg.
  3. Add the grated cheese and mix well.
  4. Add the almond flour if you add it to the dish and mix well.
  5. If you are using the extra cheese for crispiness - add a bit to the hot waffle iron.
  6. Ladle the batter to the waffle iron.
  7. If you using the extra cheese add the rest now on top of the batter.
  8. Cook by manufactory directions.
  9. Serve and good morning!
