    Double Chocolate Cookies

    The coronavirus, or COVID-19, has us all unprepared to stay home without going out unless absolutely necessary. It’s a lot to digest.

    I was shocked and stressed at first and I couldn’t even think about publishing new recipes on the blog. A few days later, everyone was piping up on social media, looking for activities to do with their kids and really wanting to bake to forget about this situation we were forced into.

    I decided no virus will stop me from baking and it’s also my birthday today so I really want something sweet to munch on. This birthday will surely be a weird celebration, especially without the whole family instead it’ll be just me, my husband (who’s birthday is a day after mine) and our baby girl.

    Because it is such a small party, I though a big cake will be a total waste and made cookies instead.

    This is also the last recipe I’ll share with flour until Passover is over.

    These yummy cookies contain dark chocolate and non-dairy white chocolate chips which is why I called them double chocolate cookies. I wanted to use the white chocolate chips I had but any chocolate chips would work here.

    The recipe is non-dairy (parve) and these cookies can fit a Shabbat meal as well. With only 6 ingredients that you probably have in your kitchen already, you can whip these yummy cookies in no time!

    The cookies might not look very impressive but when you taste them, you will be surprised at how fudgy they are! When you just take them out of the oven, they are still soft and will harder as they cool down.

    The cookies don’t spread much and the size you make them is the size they will be after baking.

    Double Chocolate Cookies

    Fudgy chocolate cookies made with dark and white chocolate. Non-dairy recipe with only 6 ingredients that you probably have in your kitchen already.

    Cook Time 15 mins
    Course Dessert

    Servings 20 cookies

    Ingredients
      

    • 1½ cups flour
    • 1 cup sugar
    • ⅓ cup vegetable oil
    • ½ cup white non-dairy chocolate chips
    • 7 oz. (200 grams) dark chocolate chopped
    • 2 eggs

    Instructions
     

    • Heat the oven to 170°C / 350°F with the fan.
    • In a bowl, place the dark chocolate and oil.
    • Melt the chocolate in the microwave in 30-second rounds.
    • Add the sugar and mix.
    • Add the eggs, one at a time and mix.
    • Add the flour and mix it to a unified batter.
    • Add the chocolate chips and mix.
    • With wet hands, create small balls of the batter.
    • Place on a baking pan.
    • Bake for 15 minutes.
    • Cool at room temperature.
    • Have a couple of cookies and enjoy every bite!
