How to make apple cinnamon muffins
With only a few ingredients, one bowl, and muffin cases, you can easily whip these yummy apple muffins in no time. Since it’s a very simple process, you can bake these muffins with your kids too.
These apple muffins are dairy-free (parve) and can be made vegan too if you switch the 2 eggs with ½ cup applesauce.
The apples I used are red, although any type will work in this recipe. You need to peel and grate the apples so the skin color doesn’t matter much. Choose a type you like. Besides apples, you will need all-purpose flour, baking powder, vegetable oil, eggs, cinnamon, soy milk (or another type of non-dairy milk), and sugar.
The muffins are soft and moist which is perfect when you’re munching on muffins. The apples and cinnamon give it a sweet flavor and it's perfect with a cup of tea or coffee or even as a sweet breakfast.
I baked the muffins in small muffin cases, although you can also bake it as one loaf, and the baking time will be a bit longer.
Tips to ensure your dairy-free apple cinnamon muffins turn out perfectly
Apple Selection
Choose apples that are firm and crisp, such as Granny Smith, Honeycrisp, or Fuji. These varieties hold up well during baking and provide a nice balance of tartness and sweetness.
Diced Apple Size
I grated the apples to get better smoother texture. if you prefer you can also dice the apples. When dicing the apples, aim for small, uniform pieces. This ensures they distribute evenly throughout the muffins and create a pleasant texture.
Non-Dairy Milk
Use your preferred non-dairy milk, such as almond milk, soy milk, oat milk, or coconut milk. Make sure it's unsweetened and unflavored to avoid altering the taste of the muffins.
Mixing Batter
Be careful not to overmix the batter. Overmixing can lead to dense and tough muffins. Stir until the ingredients are just combined, leaving a few lumps in the batter.
Baking Time
Keep an eye on the muffins while they are baking. Oven temperatures may vary, so start checking for doneness around the 17-minute mark. Insert a toothpick into the center of a muffin—if it comes out clean or with a few moist crumbs clinging to it, the muffins are ready.
Cooling
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack. This helps prevent them from becoming soggy as they cool down.
Storage
To keep the muffins fresh, store them in an airtight container at room temperature for up to 3 days. If you want to extend their shelf life, you can refrigerate them for up to a week or freeze them for up to 3 months. Thaw frozen muffins in the refrigerator before reheating or enjoying.
Customizations
Feel free to get creative with your muffins! Add a handful of chopped nuts, such as walnuts or pecans, for extra crunch. You can also mix in raisins or dried cranberries for added sweetness and texture.
FAQS
Yes, you can use a gluten-free flour blend as a substitute for all-purpose flour. Look for a blend specifically designed for baking, as it will have the right proportions of different gluten-free flours and binders. Keep in mind that gluten-free flours may yield slightly different textures in baked goods, so the muffins may be slightly denser or have a different crumb.
Yes, you can experiment with alternative sweeteners. Coconut sugar, maple syrup, or agave nectar are common substitutes. Keep in mind that the sweetness and moisture content may vary, so adjust the quantity accordingly. Also, note that using liquid sweeteners may affect the texture of the muffins.
Absolutely! You can use other neutral-flavored oils like canola oil, grapeseed oil, or light olive oil as a substitute for vegetable oil. These oils work well in baking and will not significantly affect the flavor of the muffins.
To add a streusel topping to your dairy-free apple cinnamon muffins, combine ¼ cup of granulated sugar, ¼ cup of all-purpose flour (or gluten-free flour blend), and ½ teaspoon of ground cinnamon in a small bowl. Cut in 2 tablespoons of dairy-free butter or coconut oil until the mixture resembles coarse crumbs. Sprinkle the streusel evenly over the muffin batter before baking, and then proceed with the baking instructions as usual.
