Rosh Hashanah is the theme for all my recipes featured in my blog this September. The holiday is at the end of the month and now is the time to get ready with some holiday festive food and treats. This week I am sharing a parve (non-dairy) cookie recipe that includes the most known symbol of the Jewish New Year - apples and honey.

The combination of apples and honey reflects the hope for a sweet new year. The best way to start this sweet new year off with a bang is with delicious Apple Honey Cookies.

The apples I used for these cookies are dried apples because I wanted to avoid the soggy weird texture you can get with fresh apples. Another flavor that fits very well to apples is cinnamon and I used it in this recipe as well. All the flavors in these cookies reminds me of the fall season, and that’s coming up soon!

Apple and Honey Cookies Recipe

Like most of the cookie recipes on my blog, this recipe is very quick and easy - just one bowl and 10 minutes of baking and you can munch on a delicious and festive cookie.

Because the cookies are non-dairy, you can enjoy them during the holiday meal as well. I used coconut oil as a good replacement for butter which is usually used in many cookie recipes. I like to use purified / refined coconut oil that has no coconut flavor at all, I don’t think these Apple Honey Cookies would have ended up so good if there was a coconut flavor to them.

Recipe yields 16 cookies

Apple and Honey Cookies - Renana's Kitchen

Ingredients

  • 1 & 1/2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 egg
  • 1/2 cup light brown sugar
  • 1/4 cup honey
  • 1 cup dried apples cut to small pieces
  • 85 grams (1/3 cup) coconut oil

Preparation:

  1. Set the oven to 180°C/ 350°F with the fan.
  2. In a bowl, mix all the ingredients well.
  3. On a baking pan, place 1 tablespoon of batter in large intervals.
  4. Bake for 10 minutes.
  5. Cool at room temperature.
  6. Have a cookie and happy holiday!
