    Vegan lentil soup

You know those days when you are sick and need a comforting warm bowl of soup? That is what happened to me a few days ago - I needed some soup ASAP. I came back home from work with a headache and runny nose and made this red lentil and carrot soup quickly to ease my pain and boost my body with some warm food.

What is best about this recipe is that in 40 minutes, you have your soup ready and it only requires 10 minutes of prepping. Did I mention it’s a delicious vegan recipe? (Guess I just did!)

Mastering Red Lentil Soup: Tips for Perfection

    Rinse Thoroughly

Before cooking, rinse the red lentils under cold water to remove excess starch. This helps prevent the soup from becoming too thick and ensures a clean, vibrant flavor.

    Sauté with Precision

Take your time sautéing the onions and garlic. Cooking until the onions are transparent and the garlic is aromatic enhances the base flavors of the soup.

    Spice it Right

Balancing the spices is key. Adjust the quantity of black pepper, salt, sweet paprika, turmeric, and cumin according to your taste preferences. Consider starting with a bit less and gradually adding more to achieve the perfect flavor profile.

    Consistency Matters

For a creamier texture, use an immersion blender to partially blend the soup. This will create a velvety consistency while still leaving chunks of vegetables for a satisfying bite. I usually don't bother and have the soup as it is.

    Mind the Potatoes

Potatoes tend to absorb flavors, so be generous with the spices. Additionally, cut the potatoes into evenly sized cubes to ensure they cook uniformly.

    Lovingly Simmer

Allow the soup to simmer over low to medium heat after adding the boiling water. This gives the ingredients ample time to mingle, creating a harmonious and well-developed flavor.

    Serve with Style

Enhance the dining experience by serving the red lentil soup with a side of crusty bread or a squeeze of fresh lemon juice for a zesty kick.

    Revel in Leftovers

Like many soups, the flavors of red lentil soup tend to deepen and intensify after sitting. Don't be afraid to make a larger batch and savor the delicious leftovers for days to come.

    FAQS

Do I need to soak red lentils before using them in the soup?

No, red lentils don't require soaking. However, it's advisable to rinse them thoroughly under cold water before cooking to remove excess starch.

Can I substitute other lentils for red lentils in this recipe?

While red lentils cook quickly and break down easily, you can use other lentils with a longer cooking time. Keep in mind that the texture and cooking duration may vary.

How can I make the soup spicier without overwhelming the other flavors?

Increase the black pepper or add a pinch of cayenne pepper for extra heat. Start with a small amount, taste, and adjust gradually to your preference.

Can I add additional vegetables to the soup?

Absolutely! Red lentil soup is versatile. Consider adding spinach, kale, or zucchini for added nutrition and flavor.

How can I adjust the consistency of the soup?

If you prefer a thicker soup, reduce the amount of water used. For a creamier texture, use an immersion blender to partially blend the soup.

Can I make this soup ahead of time and reheat it?

Absolutely! In fact, red lentil soup often tastes even better the next day. Store it in an airtight container in the refrigerator and reheat gently on the stove or in the microwave.

What's the best way to store leftover soup?

Allow the soup to cool to room temperature before transferring it to an airtight container. Store in the refrigerator for up to 3-4 days or freeze for longer storage.
