    Peanut Butter Blondies

    If you’re looking to start a gluten free diet after all the heavy holiday food or if you are trying to reduce sugar intake but still enjoy desserts, this recipe is for you; an easy recipe for blondies with only 5 ingredients.

    What is the difference between blondies and brownies?

    Blondies are the matching dessert for brownies.

    When you don’t use any chocolate or cocoa powder the outcome is blondies.

    Usually, brownies include butter to get a fudgy texture. In many blondies recipes there is brown sugar. In this recipe, peanut butter and silan replace it and creates a fudgy, dairy free and refined sugar free dessert.

    I have shared 2 brownie recipes and even another blondie recipe: a classic brownie recipe and marble cheesecake brownies. The blondies I shared are yummy chickpea blondies and its another gluten free option. All are delicious, be sure to check them out!

    Ingredients

    These peanut butter blondies are fudgy and gooey and full of rich peanut flavor. They aren’t very sweet since I used pure silan as a sweetener. The other 3 ingredients are eggs, oat flour, and unsweetened almond milk. Of course, any other milk (dairy or non-dairy) or simply water will work with this recipe too.

    Peanut butter 

    I like to use peanut butter that has no sugar in it or other unhealthy ingredients. Peanut butter is a nutrient-rich spread that contains high levels of protein, several vitamins, and dietary minerals. Peanut butter is used in many recipes mainly desserts but sometimes savory ones too. If you want you can use almond butter or other nut butter instead of peanut butter in this recipe.

    Oat flour 

    I made homemade oat flour for this recipe. If you want to make oat flour, all you need to do is blend oats in a high-speed blender (or food processor). You blend the oats until they become powder. You can buy oat flour too but it's also so easy to make some at home. Keep in mind that not all oats are gluten free. To keep the recipe gluten free, make sure to use gluten free oats.

    Silan

    Silan is date syrup. It is a very common ingredient in the Middle East. These blondies don’t contain refined sugar, only a small amount of silan. It adds to the blondie flavor and balances the peanut butter. I like to use pure silan that has no added sugar in it and is made only from dates. As a result, the blondies aren’t very sweet. If you want a more sweet flavor, you can use maple syrup that is sweeter or honey.

    To make the blondies, simply mix all ingredients well and pour them into a baking pan. Bake for 20 minutes and that's it.

    I baked the blondies in a 20x20cm (8x8 inch) pan but, any square pan will fit. Note that if you use a very big pan the outcome will be very low, thin blondies.

    If you want to upgrade these blondies a bit you can add vanilla extract or some non-dairy dark chocolate chips. Other than that this yummy dessert is served as is cut to small cubes without any garnish.

These peanut butter blondies are parve (kosher non-dairy) and gluten free and fit like a small sweet bite after a big meal. They are also perfect as a snack or breakfast bite on the go.

    Ingredients
      

    • ½ cup peanut butter
    • ½ cup oat flour
    • ¼ cup silan (date syrup, you can use maple syrup if you want sweeter blondies)
    • 1 cup unsweetened almond milk (or other milk you prefer )
    • 2 eggs

    Instructions
     

    • Set the oven to 180°C / 350°F with the fan.
    • In a bowl, mix all ingredients into a unified batter.
    • Pour the batter into a baking pan.
    • Bake for 20 minutes.
    • Cool at room temperature.
    • Serve and enjoy!
