I have shared a classic granola recipe on my blog, and also granola cookies, diary ones and pareve recipes. This time, however, I am sharing something new - grain free granola. The main difference from my other granola recipe is that there are no oats in it. The rest of the recipe uses the same ingredients and the outcome is a very satisfying granola.

Recently, I started reducing carbs on my daily meals and seeing as how grains are considered carbs, I altered the recipe. You probably noticed I have also shared more gluten free recipes lately. The purpose is not to find substitutes for products with gluten in them but to just change and handle the recipe without it. This way I can reduce the carbs more easily. I don’t stick to a keto or paleo diet but I just create some sort of mix and in general am trying to eat healthier food. For example, adding more fruits and vegetables and also staying with planet based products and away from any product that was created in a factory and changed its form in some way. Sure, I have days that I cheat but that’s how diets go sometimes!

With this grain free granola, I feel better and less worried that I just completely ruined my diet. If you need something sweet this is a better option than other sweets.

This granola is chunky, sticky and even clustery. I used whole pecan, big coconut flakes and whole walnuts which made the chunks bigger. You can also chop the nuts into smaller pieces for smaller chunks.

The ingredients of this grain free granola are pecans, walnuts, slivered almonds, pumpkin seeds, unsweetened coconut flakes, olive oil, silan (date syrup), maple syrup, cinnamon and salt.

The process of making the granola is simple and quick. Mix everything together and bake. Baking time may vary depending on how much you like to roast the nuts. Also some ovens will start burning faster so don’t leave it to bake and forget about it. You might need to turn the pan around to get an even baking of all the batter.

The granola is nutty and sweet but not too sweet. You can change the quantities of the maple syrup and silan to your preferred sweetness. Another option is to omit the silan and maple syrup completely and have a more savory flavor. This way the granola will be sugar free and less sticky. You can add maple syrup and silan after baking to the bowl you are having. If you can't get silan you can use honey or agava or add more maple syrup.

You can add other nuts you like and/or omit the ones you don’t like. If you want you can also add dried fruits after baking the granola. I used olive oil since I like its flavor. You can also use coconut oil which fits the coconut flakes in the granola and is considered healthier than other vegetable oil. The recipe is very open to changes and you are welcome to make it your own.

Here is the recipe for this yummy grain free granola:

Ingredients:

  • 2 cups (200 grams) halved pecans
  • 1.5 cups (150 grams) walnuts
  • 1 cup (100 grams) slivered almonds
  • 0.66 cup (75 grams) pumpkin seeds
  • A little less than 3 cups (260 grams) unsweetened coconut flakes
  • 1/4 cup olive oil
  • 1/4 cup silan (date syrup)
  • 1/8 cup maple syrup
  • 1 teaspoon cinnamon
  • Pinch of salt

Preparation:

  1. Set the oven to 160°C/ 320°F with the fan.
  2. Line a baking pan with baking paper.
  3. In a bowl, place all ingredients.
  4. Mix well.
  5. Bake for 20 minutes.
  6. Check the granola after 10 minutes, you might need to turn the pan around to get an even baking of the granola.
  7. Cool the granola completely at room temperature.
  8. Serve and enjoy!
