    Blueberry Apple Crumb Squares

    Do you really need a reason to bake something delicious for yourself and your family? I don’t think so! These blueberry and apple crumb squares are very easy to whip up and the recipe is also vegan - a double win.

    You make a dough and flatten it in a pan, pour some apple and blueberry filling on it, and add the crumbs, which are just part of the dough you set to the side, that’s it! I told you it’s super easy!

    The blueberries I used are fresh because I had some and wanted to use them before they go bad. Frozen blueberries will work in this recipe as well. You can also change the blueberries to a different berry if you want. The apples I used are green granny smith apples, but any type will work. The apple is peeled and grated so the skin doesn’t matter much. As I mentioned this recipe is vegan, so instead of butter in the dough, I used coconut oil. It works as butter because it becomes solid when cooling in the fridge and melts when heating. I like to use purified coconut oil because it is bland and has no coconut flavor at all. Another ingredient in the dough is quick oats, it adds more texture and flavor along with the almond meal (ground almonds).

    These Crumb Squares are amazing right out of the oven, but even the next day – you can choose what you like better.

    However, note that cutting them into squares when they are still warm will make them fall apart a bit.

    I can have these squares during all hours of the day but they are great as a dessert, as a sweet breakfast bite, or with your afternoon tea/coffee.

    I baked the squares in an 18x20 cm / 7x8 inch square pan I got a few years ago from Ikea, any small square pan will work. If you want a bigger batch of squares, you can double the ingredients.

    Blueberry Apple Crumb Squares

    Ingredients
      

    • 1 cup all-purpose flour
    • ½ cup ground almonds (almond meal)
    • ½ cup sugar
    • ½ cup quick oats
    • ¾ cup coconut oil (solid)

    For the filling:

    • 1 cup blueberries
    • 1 peeled cored and grated apple
    • 2 tablespoon sugar

    Instructions
     

    • Heat the oven to 170°C / 350°F with the fan.
    • In a bowl, place all dough ingredients and mix with a fork to a crumby mixture.
    • Take ¾ of the crumbles and flatten on a small square pan.
    • In a mixing bowl, mix the filling ingredients.
    • Pour the filling on the flattened dough in the pan.
    • Sprinkle the ¼ crumbles that you kept, evenly on the filling.
    • Bake for 30 minutes.
    • Cool at room temperature.
    • Cut to squares.
    • Enjoy!
